Refrigerator Cereal Muffins | Easy Make-Ahead Breakfast

Some recipes just stick with you — not because they’re fancy, but because they make life easier and taste like home. These Refrigerator Cereal Muffins came from our sweet neighbor years ago. She’s one of those amazing cooks who always has something freshly baked, even on a weekday morning. I still remember her telling my mom she kept this muffin batter in her fridge and baked them fresh for her girls before school.

Now, we’re not quite that put-together. Our family bakes a big batch, freezes them, and warms them up for breakfast all week long — and they’re still delicious. High in fiber, soft, and perfectly sweet, these muffins are the kind of thing you forget about for years… until you visit your sister, and of course she has them ready to go — even on a surprise visit.

The best part? You can make the batter ahead and keep it refrigerated for up to six weeks. Bake one, bake twelve — whatever your morning calls for.


🧁 Refrigerator Cereal Muffins

Ingredients:

  • ½ cup vegetable oil
  • ½ cup applesauce
  • 2 cups sugar
  • 4 eggs
  • 2 cups boiling water
  • 1 quart buttermilk
  • 5 cups flour
  • 5 teaspoons baking soda
  • 1 teaspoon salt
  • 3 cups All-Bran cereal
  • 2 cups Bran Flakes cereal
  • 1–2 cups raisins or blueberries (optional)

Instructions

  1. Prep the water: Boil 2 cups of water and stir in the baking soda. Let it cool slightly.
  2. Mix the wet ingredients: In a large bowl, beat together oil, applesauce, sugar, and eggs.
  3. Combine everything: Stir in all remaining ingredients by hand, including the cereals and cooled water mixture.
  4. Let it rest: Store the batter in an airtight container in the refrigerator for several hours (or overnight) to let the cereal soften.
  5. Store or bake: The batter will keep in the fridge for up to 6 weeks!
  6. Bake: When ready, spray muffin tins with cooking spray and bake at 400°F for 20–25 minutes, depending on size. Jumbo, medium, or mini tins all work.
